Keto Chili

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 pound Italian sausage
  • 8 cups spinach
  • 1 cup fire roasted tomatoes
  • 1/4 cup parmesan cheese
  • 2 medium bell peppers
  • 2/3 medium onion
  • 1 tbsp. olive oil
  • 1 tbsp. cumin
  • 1 1/2 tbsp. chili powder
  • 2 tsp cayenne pepper
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions

Dice onion and peppers. Season with salt/pepper and sauté in olive oil on medium-high heat stirring occasionally.

Add ground beef and sausage. Season with salt, pepper, and remaining spices. Cook until brown and cooked through. Drain.

Add spinach to the pot let steam for 2-3 minutes, then mix well.

Add fire roasted tomatoes to pot, stir well. Reduce heat and cook additional 10 minutes.

Add parmesan cheese and cook until melted and blended together.

Serve with your choice of keto friendly toppings.
