Almond Joy Egg Loaf Muffins

As you have probably already read, I am obsessed with EGGLOAF. It is the closest thing to bread that I have had since starting my journey on a KETO way of eating (woe).

I was on keto for 7 months before I tried my first Egg Loaf. (See my How To Keto board on Pinterest to learn what the KETO diet is all about.) I had heard all about this delish desert by @ketosami.am on Instagram. While making keto pancakes, she decided to put the mix into a bread pan instead of making a bunch of pancakes. So I thought I would try to make some. It turned out amazing!

Shaking Things Up!

It wasn’t long before I started adding additional ingredients to the batter. Each concoction turned out better than the one before. Almond Joy Egg Loaf is my latest experiment. It’s so easy and has just the right amount of coconut and chocolate. Muffins have never been so good!

Try It for Yourself

ALMOND JOY EGG LOAF RECIPE

  • 8 eggs
  • 8 oz.cream cheese
  • 4 tablespoons butter
  • 6 tablespoons coconut flour
  • 3 tablespoons unsweetened coconut flakes
  • 1 tablespoon Stevia
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 cup finely chopped almonds
  • 1/4 cup dark chocolate chips

Cream together butter and cream cheese. Add eggs, coconut flour, coconut flakes, Stevia, baking powder, and vanilla extract. Beat for 1 minute. Stir in chips. Pour evenly into lightly nonstick sprayed muffin pan. Sprinkle tops of muffins with almonds. Bake at 350 F for 45 minutes. Optional – serve warm with Sugar Free Syrup and butter.
