Blueberry Eggloaf Muffins

One of my favorite breakfasts on my Keto diet is Blueberry Egg Loaf Muffins. It has the consistency of a real muffin plus the blueberries add the perfect amount of sweetness.

These blueberry treats hit the spot as a breakfast meal that I can prep at the beginning of the week. (My Pinterest Meal Prepping board). They are also great for an evening snack when all of my other peeps are scarfing down chocolate cake. These guys make it a little easier for me to stay on track. 🙂

Blueberry Sweetness

Here is my easy recipe for Blueberry Egg Loaf Muffins:

BLUEBERRY EGG LOAF MUFFIN RECIPE

  • 8 eggs
  • 8 oz.cream cheese
  • 4 tablespoons butter
  • 6 tablespoons coconut flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • dash of cinnamon
  • 1/2 cup blueberries

Cream together butter and cream cheese. Add eggs, coconut flour, baking powder, vanilla extract, and cinnamon. Beat for 1 minute. Stir in blueberries. Pour into lightly sprayed muffin pan. Bake at 350 F for 45 minutes. I serve mine with Sugar Free Syrup and butter.
