Banana Nut Egg Loaf

One of the things I miss most being on a Ketogenic Diet is BANANAS! Before Keto, Bananas weren’t my favorite food. I usually had not more than 2 a month. And it wasn’t the fruit that I would pick first for a snack or meal. But now that I am not supposed to partake, I MISS THEM!

It’s a crazy thing that when you cut sugar out of your diet, fruits become the sweetest thing to your taste buds (for me anyway). And what’s even weirder is that eggs taste like a big gigantic no-no because for some reason when you add some yummy butter and cream cheese – EGGS BECOME A DESSERT. Throw in some banana extract and BAM!

And my Banana Nut Egg Loaf was born.

Don’t Wait So Long To Try It!

First, let me tell you, I had been doing keto for 7 months before I partook of my first Egg Loaf. (See my How To Keto board on Pinterest to learn what the KETO diet is all about.) I heard all about this delish dessert by @ketosami.am It was all over Instagram. While making keto pancakes, she decided to be lazy (sorry sam) and just put the pancake mix into a bread pan instead of make a bunch of pancakes. And it is amazing!! I waited way too long to try it. Take my advice and make one this week. You will thank me for it.

Stepping It Up a Notch

So after 2 months into egg loafing it, I thought that adding some banana extract and walnuts (nuts are keto) into my egg loaf might step up my already new favorite snack (or breakfast, lunch, dinner). )n keto you eat whatever whenever, never really categorizing meals by breakfast, lunch, and dinner anymore. that’s another post in itself. Find that here. Well, It was even better than I expected. Not exactly banana nut bread, but pretty darn close.

Here is my recipe for the closest thing to bread that I’ve had in forever and a day:

BANANA NUT EGG LOAF RECIPE

  • 8 eggs
  • 8 oz.cream cheese
  • 4 tablespoons butter
  • 6 tablespoons coconut flour
  • 1 tsp banana extract
  • 1 tsp baking powder
  • dash of cinnamon
  • 1/4 cup chopped walnuts

Cream together butter and cream cheese. Add eggs, coconut flour, baking powder, banana extract, and cinnamon. Beat for 1 minute. Stir in walnuts. Pour into parchment paper lined loaf pan. Bake at 350 F for 45 minutes. I serve mine with Sugar Free Syrup and butter.
